Garam masala is used with many meat and fish dishes. You will also find it in vegetarian and vegan dishes and soups based on legumes and vegetables.
Step 1: Warm the oil in a Dutch oven over medium high heat. When it melts, toss in the chopped chicken or vegetables. Sauté the chicken or vegetables in the hot fat until it turns opaque, and then stir in the yellow onions. Turn down the heat to medium, and sprinkle the salt over the onions. Stir frequently and allow the onions to cook in the oil until translucent, about 10 minutes.
Step 2: Stir in the garlic, ginger, turmeric, cayenne and garam masala. Continue stirring the spices into the chicken or vegetables and onions until they're completely coated. Then stir in the diced tomatoes and coconut milk.
Step 3: Simmer the sauce over medium heat, stirring occasionally, until the chicken or vegetables fall-apart tender and the sauce thickens – about 20 minutes. Serve warm over rice with chopped cilantro.
